PRODUCT: Eau-de-vie of pomace vinified annually to make Moscadello di Montalcino DOC - Capanna.
DISTILLATION PERIOD: In the first few days after completing the fermentation of the pomace.
After soft pressing, the still moist pomace is sent to the “Nannoni” distillery where, after fermentation, the whole process is performed: it is a discontinuous distillation system “IN SELECTION” with a hot steam flow and low degree column with manual cutting of head and tail which allows excellence to be obtained, respecting the aromas of each individual batch of pomace.
over 18 months in wooden barrels and about 2 years in bottles.
Colour: clear, amber.
Bouquet: intense, persistent and aromatic, the unmistakeable aroma of the Moscato can be recognised.
Taste: soft, warm, pleasantly round, with an aftertaste which perfectly reflects the aroma.
Food pairings: to round off a meal. Serve in the classic tulip shape grappa glasses.
