DISTILLATION PERIOD: In the first few days after racking.
After soft pressing, the still moist pomace is sent to the “Nannoni” distillery where the whole process is performed in the next 24 hours: it is a discontinuous distillation system with a hot steam flow and low degree column with manual cutting of head and tail which allows excellence to be obtained, respecting the aromas of each individual batch of pomace.

Colour: clear, transparent and crystalline.
Bouquet: wide and harmonious, the aroma of the Sangiovese and underwood fruits can be recognised.
Taste: dry, warm and harmonious with an alcoholic but not aggressive tone.
Food pairings: to round off a meal, it is also excellent with a Tuscan cigar. Serve in the classic tulip shape grappa glasses.
